I mostly picked this recipe because it uses a crazy amount of fennel, and a pile of seafood. How often do I get to use fennel in a dish on purpose?

Pasta with Smoked Sausage, Fennel and Arugula

This dish was inspired by the combination of fennel and smokey, spicy sausage.
There’s something about the sweet licorice taste of the fennel, mixed with the salty, spicy, smokey, greasiness of the sausage.
Maybe I should have left out the greasiness part.
